Craisin Brandy Recipe D.I.Y.

Ingredients

  • 4ounces freshly grated ginger
  • 4 ounces lemon juice
  • 6 ounces simple syrup
  • ⅛ teaspoon commercial baker’s, brewer’s or Red Star Pasteur Champagne yeast
  • 20 ounces of non-chlorinated water (filtered, distilled or spring)
  • 1 to 4 grams of cream of tartar (not necessary, but traditional, to help the yeast and bacteria thrive).

Instructions

  1. Take a 1.5-liter plastic bottle of spring water and empty it into a clean pitcher. Use some of it to make simple syrup by stirring 1/2 pound of sugar into 1 cup hot water until fully dissolved
  2. In a large measuring cup, mix all ingredients and stir well. Funnel back into the plastic bottle and cap tightly. Opening once or twice a day to avoid an explosion. The alternative put a balloon over the neck, then put a pinhole in the balloon. Cap after fermentation.
  3. Store in a warm, dark place for 24 to 48 hours. (I put mine inside a box, to contain it if it should blow.) The top of the bottle will expand and become tight. Check it and very slowly release the pressure if it’s looking groaningly tight. Some people ferment it with no top, or with the top on loosely, to allow gas to escape. I suppose if you wanted to get fancy you could spend $1.50 on a fermentation lock and stop worrying about it. If the temperature is quite warm, above 80F, a single day may be sufficient. The longer you let it ferment, the drier the final mix will be.
  4. After 48 hours, refrigerate it to stop the fermentation. Once chilled, you can strain out the pulp and dead yeast, which will have made sediment on the bottom. Makes 1 liter and will keep up to a week in the refrigerator.

Terebelo Distillery Smoking Chips

As the BBQ season heats up, I could find no better wood chips than Terebelo Distillery smoking wood chips for my meat and chicken on the BBQ.

Before I start, let me share the fun Binyomin Terebelo is a great friend of mine. He actually is the main blogger here at Buildthebottle. To remain ‘impartial,” I wrote the article.

Smoking with your meat and chicken with wood chips is a time-honored American tradition, or it is at least in my family.

The flavor of the wood is, of course, essential. Over the years, I noticed that the flavoring was getting synthetic. I wanted to purchase wood chips. I started looking on the back of the back, and there was a list of “ingredients.” Why was there more than “wood”? In truth, why was there even a list called ingredients?

Terebelo Wood Chips

I remembered a conversation a while ago with my friend Master Distiller Binyomin. [I just realized I am blogging from his account, and his profile will be on the bottom.] He mentioned that he has oak barrels used to age his world-famous New York bourbon, and as the law prohibits using a bourbon barrel more than once, he had no use for them. I mentioned to him to make BBQ chips, and that was pretty much the end of our conversation.

I reached out to him again and asked him what happened, and you won’t believe what he said. “Binyomin tells me that he liked the idea he is releasing freshly chopped wood chips from Terebelo Distillery still damp with his bourbon.”

I couldn’t believe my ears! After raking him over the coals for not telling me he was following up on my suggestion. (No pun intended) I asked if I could come over and pick some up which, of course, he was so gracious as always and said come on over.

Let me tell you; the BBQ was the best BBQ I ever had. The smoked wings and beef were so good you got to try them.

The Real Way

Directions

  • 1.2kg Black Craisin
  • 4.5 liters Water
  • 1.1kg Sugar
Step 2
  • 2 tsp Acid Blend
  • 1 tsp Yeast Nutrient
  • 1/2 tsp Pectic Enzyme
  • 1 Campden Tablet
  • One sachet of Yeast (we recommend Lalvin RC 212)

Utensils

  • 2 Caroboy’s or fermenting containers
  • Fruit Press
  • Straining bag
  • Siphon
  • Airlock
  • Airlock bungee

Instructions

Step 1

Heat the water in a pan on the stove, add the sugar and stir to dissolve. Bring to the boil for a minute, and then turn off the heat.

Use a potato masher to crush the berries thoroughly. Take the prepared elderberries and place them in the straining bag; add them to your sanitized fermenting bucket.

Keep in mind raisins can stain, so try not to get any on your clothes. Your straining bag will never be the same color after making elderberry wine!

Step 2

After 24 hours, add your Yeast and the rest of stage 2 and cover your fermenter.

Take the sugar gravity with your hydrometer. Starting Specific Gravity (S.G.) should be between 1.085 – 1.090

Stir your batch every day and check the Specific Gravity with your hydrometer. In about 3 – 5 days, your S.G. should be about 1.040.

Step 3

You will siphon your wine off the sediment into your secondary container, which is usually your glass carboy.

Now distill the brandy.

(The sediment is the stuff that accumulates at the bottom of your container.)

Attach your airlock and wait for your fermentation to be complete.

You will know it is complete when your S.G. has reached 1.000. This will take about three weeks.

Step 4

Siphon your wine off the sediment into a clean secondary carboy, and reattach your airlock.

You will wait about two months and then siphon your wine off the sediment again. Keep doing this until your wine is clear. If it is clear now, then it is time to bottle.

Step 5

Let the wine sit for a couple of months before drinking.

HEMI-CELLULOSE and Cellulose:

Remember those words from school? What a nightmare. Now it has to do with your alcohol so let’s break it down.

Hemi-Cellulose and Cellulose: are sugar compounds found all over the place, but we are talking about oak used in barrels.

Hemi-Cellulose and Cellulose love fire, changing their makeup as they are heated and letting loose from the sugars contained within the wood.

We move on to the interaction between your bourbon and the wooden cask.

Alcohol, the essence of your spirit, is a solvent, as you probably know from floor cleaners and other cleaning agents,

The sugar, with time, will get dissolved within the alcohol. This may be a good thing; however, as the alcohol dissolves the sugar, it progressively works towards the outer parts of the barrel to oak that’s not been charred. This is not a good thing, for it is now giving your bourbon an “oaky taste.”

There are seven levels to barrel charring used.

  1. Heavy toast
  2. Heavy toast Light char
  3. 1 Char/ Medium Char
  4. 2 Char Medium Plus char
  5. 3 Char heavy char
  6. 4 Char Char, also known as or alligators char
  7. 5 Char Distillers char

In truth, there are too many variables in the system than to let’s say it’s all guestimates. A char four from the barrel mill might be different from ISC or Seguin Moreau.

Then there’s the type of oak you are using, is honeycombed cut or deep cut if cut at all. It is grown (the flavor comes from the caramelization of wood proteins/sugars, so composition is essential). The result of all of this is that is a lot of cask to cask variation. At Terebelo Distiller, we get a complete variety of chars, but even 10 ‘identical’ barrels with the same spirit might all taste quite different.

 Level 1 char (15-second burn)

Level 1 char is ideal for quick-aging bourbon one step above a heavy toast. Level 1 doesn’t impart nearly as much woodiness into the alcohol as higher chars but still gives some flavor.

Level 1 is mainly used for home distilling. Most cooperages do not even offer it to distilleries.

Level 2 char (30-second burn)

Level 2 char is used among distilleries, but not widely. The flavor profile is very different from heavier charred barrels. The strong caramel tones of higher levels don’t overpower this Char. There’s a more pronounced sweetness that distilleries use to their advantage; Some distilleries custom order level 2 charr after toasting; this adds vanilla, coffee, and spiciness to each finished spirit.

Level 3 char (35-second burn)

Levels 3 and 4 char is the standard for American bourbons and whiskeys. As the spirits are aged in these higher-level chars, the alcohol develops an earthy and spicy flavor. Level 3 often has a natural wood taste and scent, while the more extended chars introduce a deeper color, vanilla tones, and caramelization.

Level 4 char (55-second burn)

This char level is also called Alligator Char. After 55 seconds of fire, the barrel begins to crack and peel into a rough, shiny pattern that looks like alligator skin. The alligator Char gives more surface for interaction and a different variety of surfaces for the spirit to interact with as the charring now becomes uneven. This will get you a subtle vanilla palate from the wood, in addition to adding a smoky char flavor that contrasts nicely with the sweeter notes.

American Oak Casks or White Oak

For the most part, bourbon is aged in American oak casks, though at times French Oak or other oak may be used.

There are 10 different types of American Oak trees each with an unpronounceable name some are better than others and then there is the best. The one called Alba is considered the best.

The question you must be asking yourself now is why, well the holding structure of oak for one. This is because upon tree death and formation of the heartwood there forms tyloses a bubble-like structure in the wood which prevents leakage by the state ends or top and bottom of the barrel.

The number of bubbles found in oak makes it uniquely suited for storing.

Another feature found in white oak is the multiseriate medullary rays, these are the tree arteries used to transfer water to the top of trees they can’t leak water. There is so much overlapping in the tree that it makes the barrels waterproof.  They are so dense that if liquid trying to exit the barrel would try to beat a straight line it would have to cut through 5 layers.[1]

Another important factor is the flexibility of the wood most wood after seasoning, seasoning is leaving the barrels out in the open for 36 to 48 months most wood becomes brittle oak does not.[2] Thus enabling the cooperage to work with the wood to create barrels.

Make An Ohio Cocktail

Hey Guys and Gals, are you Looking for an awesome Ohio? You now have no reason to look any further! This is a recipe you are sure to enjoy!

Ingredients

  • 3/4 ounce Rosso Vermouth
  • 3/4 ounce of terebelo bourbon
  • Dash of triple sec
  • Dash of Angostura bitters
  • 3-5 ounces of champagne

Instructions

Pour all ingredients but the champagne into a chilled champagne flute. Slowly top with champagne.

Ever wondered why those wooden casks that you purchase as planters are in such demand by distilleries? Ever wondered what Oak is used and why? 

This will be a series of articles,, recordings, and video’s exploring the different oaks used in aging. Why,, for the most part,, oak is used and not other woods. 

Let us begin with exploring the primary oaks used,, and then we will follow up with explaining the benefits of each one,, the dynamics,, tastes and color,, and of course,, much more. 

A brief history is a must; Oak was used as a shipping container for all goods until the turn of the 20th century. This is important to remember,, for at times,, barrels that are referred to,, such as Sherry Casks,, are really not made from Sherry but contained Sherry for transport. This has changed,, as we will find out during our finishing series. 

Another thing to keep in mind is the level of char in American Oak and the level of toast for French Casks for French Casks. 

Other topics that will be discussed will be the influence of the size of the barrel, the type of water, the grain, the, yeast, temp and much much more. 

American Oak,, also Known As White Oak..

American Oak grows throughout the United States. For years, the premier location of the tree’s being harvested was located near the Distilleries in Kentucky; this has changed. With the discovery of the quality such Minnesota, the Trees adding a more full and delicious flavor cooperates have opened throughout the country. For the most part, artisanal distilleries such as Terebelo work with smaller cooperages since they have the same goal in mind. That is to deliver a luxury product instead of a mass-produced product ensuring that, there are no bandaids like wheat flour paste to keep the barrels from leaking. That is why small cooperages are gluten-free.

French Oak

French oak barrels come from one of five forests, some of which were initially planted during Napoleonic times for shipbuilding. These forests, primarily located in central France, are Allier, Limousin, Nevers, Tronçais, and the Vosges, and each is considered to have distinctive characteristics. 

European Oak Also Known As Eastern Europe Oak

Similair in profile to French oak without the storied passed grows deep into Russian and Turkey. 

Mizunara Oak

Mizunara oak is very common in the forests of northeast Asia, where it is used primarily for high-quality furniture. Due to its high density and thin fibers, the staves must be cut along the fibers, which never grow perfectly straight. The Oak also lacks waterproofing oil enzymes, so much more Whiskey evaporates during aging than when stored in American or European oak. Despite these characteristics, which make it much more difficult to use for Whiskey barrels, Mizunara oak gained popularity for Whiskey aging in the early 20th century.

Not least because of the special aromas it gives off to Whiskey, reminiscent of sandalwood, coconut and oriental spices, for example.

Brazilian Oak

Also known as Amburana, and Cerejeira amongst many other names in Portuguese, it can be found in the Northeast, Center-West and Southeast regions of Brazil. The tree has an average height of 10-20 m (32-65 ft.) and a trunk measuring 40-80 cm (16-31 in.) in diameter. It imparts an intense color, a distinct characteristic aroma bouquet with notes of vanilla, and a slightly sweet flavor. This wood is often blended with either french or American oak.

Mexican Oak 

Mexican Oak was used in the past to store Tequila, in the distillery. Today it is extinct found only in very old and traditional Tequila Distilleries as holding vats.

Spanish Oak 

Similiar in profile to French oak with a little more smoky and vanilla nuances . Though there is much speculation that it is responsible for the unique flavor of Bourbons that are aged in Sherry casks as Sherry is a Spanish Wine. This unfortantly is not accurate for Sherry wine is today aged in American Casks to the exclusion of Macallan which has their own cooperage and conditions the barrels with their own sherry. You may be able to argue this is part of what makes Macallan so unique.

Specialty Barrels Not Widely Used But Worth The Mention

Hard Maple, Hickory, Red Oak, Sassafras, Soft Maple, White Ash, Yellow Birch, Danish Oak, Acacia, Ash, Chestnut, Cherry Tree and Mulberry, white oak, chestnut oak, red or sweet gum, sugar maple, yellow or sweet birch, white ash, Douglas fir, beech, black cherry, sycamore, redwood, spruce, bald cypress, elm, and basswood) and Europe (white oak, chestnut, fir, spruce, pine, larch, ash, mulberry), and a number of additional species imported from Africa, South America, and Australia (acacia, karri: Eucalyptus diversicolor; jarrah: Eucalyptus marginata; stringybark: Eucalyptus obliqua and Eucalyptus gigantea; and she oak:

Some are used to hold wine or spirits, however most of the barrels woods  are not approved to be used by the Organzation of Vine and Wine and therefor ignored by industry.

Coconut Infused Rum D.I.Y.

Hey Guys and Gals, are you Looking for an awesome Coconut Infused Rum D.I.Y.? You now have no reason to look any further! This is a recipe you are sure to enjoy!

Ingredients

Step 1
  • 3 cups of freshly grated coconut
  • 3 cups of rum
Step 2 optional
  • 2 cups white granulated sugar
  • 1 cup boiling water

Instructions

Step 1

Pour your grated coconut into a large container and add rum close and shake.

Aging And Straining

Seal the container and let steep in a cool, dry place for three weeks.

Get your cheesecloth to filter. It helps to moisten the cheesecloth first, so the liquid permeates more smoothly.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the remaining liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it one more time through a coffee strainer.

Step 2 optional

Make your syrup, put a saucepan on the flame, pour in water, and bring to a boil stir in sugar. Keep on stirring until sugar has dissolved. Let the syrup cool down completely.

Pour into a jar and let it rest in a dark place for another 15 days.
When the 15 days are up, filter it again and bottle it up.

Strawberry Infused Bourbon D.I.Y.

Ingredients

Step 1
  • 3 cups of strawberry
  • 3 cups of bourbon
Step 2
  • 2 cups white granulated sugar
  • 1 cup boiling water

Instructions

Step 1

Clean, then crush your blueberries and place them in your jar. Next, pour in your bourbon, make sure all the blueberries are submerged, cover, and shake.

Why I Am Sad That My Bottle Is In Stores?

It is Thursday, and I am downright overwhelmed with deliveries. Last night I was in Flatbush, Kennsington, and Marine Park. I love to hand-deliver each bottle and share its story and, in turn, see the beautiful photos and video’s taken of each bottle. It is so personal to me, and I sincerely appreciate the feedback and compliments I am getting!

Sadly I am forced to try something new. I delivered a few bottles to a few select stores, stores that love and care for my story. Stores that tasted it and appreciated the uniqueness of 100% New York corn making it taste closer to a Scotch than a Kentucky Bourbon. Out of my own volition, I limited the quantity a store can take to two bottles to ensure that no one can buy a case and deprive you of your “Terebelo Shabbos.”

If you go into your store and take a video of the bottle, or when you buy one, you take a video of it at home on the Shabbos table and submit it to Our Website. It will mean so much to me to see that my bottle is where it belongs! Of course, you can be sure that I will get back to you!

Ingredients

  • 2 papaya slices
  • 3/4 oz agave nectar
  • 1 1/2 oz añejo tequila
  • 1/2 oz Aperol
  • 3/4 oz freshly squeezed lime juice
  • 1/2 oz freshly squeezed orange juice

Directions

In a mixing glass or cocktail shaker, add 1 slice of fresh papaya and the agave nectar. Bang-up the fruit with the back of a spoon. Add the tequila, Aperol, and lime, and orange juices. Fill with ice.

Shake vigorously. Strain over fresh ice in an old-fashioned glass.

Garnish with the remaining slice of papaya. Serve and enjoy.

Whiskey Review How To Review Whiskey

I am excited to share with you a new section called the whiskey review. Hopefully, we will review a whiskey a week and share with you some thoughts about it.

First, how do you taste a whiskey to write a review? This is a seven-step process that I am going to share with you.

  1. You need the right glass.

In your standard tumbler, the aromas of the whisky are going to be able to spill all over the place. You want something that can concentrate those aromas towards your nose so that you can appreciate them. A Glencairn the shot glass portrayed is the best one to capture all the aromas until you develop your taste and decide what you want.

  1. Write what you think.

Be honest with yourself. Don’t let anyone tell you what to smell and taste. That includes not reading the back of the whisky box or label or listening to the rep standing across the table, which so badly wants to make the sale to you. Of course, there is always a benefit to comparing notes with a friend and hearing all other’s input, including the sales rep.

  1. Time and patience

Tasting lots of different whiskies, and knowing about the distilleries they are made in, will assist you in being able to identify with a sniff the typestyle and location—a Bourbon by tasting a sip. Even further on, you might learn to recognize a particular distillery, age, or cask type!

  1. Drink it your way (water can help).

Again, don’t let anyone dictate how you like your whisky. But for review, to get the whiskey to open up, avoid ice, as coldness numbs the palate. However, some would suggest adding a small drop of water; this can help to bring out the whisky’s character and flavors.

  1. Compare but not to many at once!

Get a few whiskies and a few glasses, yes use a fresh glass for every shot. Taste away! Eat something bland in between shots.

  1. Score your shot!

Sum up your experience of the whisky with a grade. You may like an exam-style A-F grade or a numerical score ranging from 0-100, 0-10, or 0-5.

Or the ‘four questions’ scale: Is it worth its value? Would I buy this? Would I order it in a bar? Would I drink this if someone gave me a glass?

  • 1 cup sprite equivalent

Touring The Tequila Region In Mexico

I am so excited my travel agent made this suggestion; it will be mind-blowing awesome, so much to learn, and a great trip ahead. Yes, I cannot get a direct flight from New York to Manila Philipines as I so badly wanted to do so, at my travel agent’s suggestion, I will be making a stopover at least one in Mexico or at least flying there first and then deciding if I should continue onwards afterward or head back to New York!

I write as I fly and travel at least virtually in this pandemic!

I will be landing in Guadalajara, Mexico, the closest Airport to Tequila City. I can imagine what’s going through your mind Tequila and Mezcal! You just hit the nail on the head!

Obviously, going to Tequila city means that I will be stopping at all the famous distilleries and possibly even taking the famous train.

Let’s get a little more grounded first with the planning. The first is booking those tickets. There is only one direct option, and it flies out every other day of the week. Here was my choice Monday so that I can really get the most out of the week before I fly out! I know I am getting a little carried, but this is just so awesome.

The price is a little expensive, and there is no points option, but hey, If I go, I will be in Tequila land, so I would say it is worth it.

What Are Tequila And Mezcal And Of Course Is It Kosher Can I Taste Them?

In a nutshell, Tequila comes from the Agave plant. This sounds innocent enough. What cannot be kosher?

Let us start with regulation, that. Is there any government regulation ensuring quality and purity to this? The answer is yes. In much the same way, the French have appellations which mean regions or areas that may use unique and special titles, so Tequila must be made only in the Tequila region of Mexico. Further, it must only be made from the Tequilana Weber or Blue Weber agave plant. The area’s that may use the term Tequila are the Mexican states of Jalisco, Nayarit, Tamaulipas, Michoacan, and Guanajuato. In addition, we were surprised to learn that Tequila may be called Tequila as long as the bottle is 51% Tequila. That said, if it says 100%, it must be 100%. So that so far rules out tasting anything that doesn’t say 100% agave on the bottle.

My Flight Reservation Hotel And Rental Car

Landing in Guadalaraja airport, I swing into the Duty-free shop to check the prices of the Tequilas they stock. I then check the prices against what’s available online on Boingo international service. They are not any better than just ordering it at home directly to my house, so I will keep my eyes open as I travel for good deals.

I will be staying in Guadalaraja, the City of Tequila has no chain hotels, and in foreign countries, that happens to be where I feel the safest.

I booked the rental car directly from the airport from Avis, a brand I know from the states though I don’t think that that truly means anything.

I then headed out the Chabad house to visit and pray before making my way to Tequila city to meet my guide for the day, Juan.

I head out to Tequila city, where I meet up with Juan, a nice delightful fellow wearing the full cowboy dress.

So far is great, but of course, you know I like to get hands-on! Surprise, there is an awful lot of details that we must learn and examine, so put on your Sombrero, and let’s head out to the field. Jimador or farmers, Jimadors are what the expert agave pickers are called. They specialize in cutting the leaves of the pina-heart of an Agave plant, removing each leave of the first hack!

Juan, our guide and former Jimador ha made special reservations for us to tour an Agave plantation. He even brought along his coa. That’s the special tool used to hack off the prickly leaves called the pina or pineapple.

These fruits are extremely heavy, weighing up to 300 pounds. The way they are carried is on the heads of the Jimador, a talent but a talent that doesn’t seem to pay very well. Juan lives in what we would consider a shack and dreams about drinking the high-end Tequila he helps make one day. Still, in the meanwhile, he says he will supplement his meager income by giving tours of the local distillery where his picked pina is roasted and then distilled into Tequila.

Even more amazing was when Juan shared he just cut an Agave plant he planted 7 years ago! I was surprised to learn that an Agave takes 7 years to grow till you pick its fruit, and then it dies, producing in its entire lifetime only 1 fruit which takes at least 7 years to grow.

I am stopping now for lunch after lunch a whole lot more is in store while wait make sure to read the article’s below!

  • 2 ounces tequila
  • 4 ounces tomato juice

Directions

The Essential Home Bar List

I decided to scribble down a bit on the topic of Essential home bar must-haves. While I wait for a travel agent to assist me!

For those that don’t know I am trying to book a direct flight to Quezon City. The nearest airport from Quezon City is the Ninoy Aquino International Airport.

The only direct flight from N.Y.C leaves on Thursday and land on Shabbos (yes it’s a long flight) so obviously that’s out. Another issue is there is no business class on direct flights from N.Y.C. and I’m sure that will be an issue by an alternative airport to so yes I will be using a travel agent!

The most amazing thing about the Essential home bar list is the efficiency and thrill you will have preparing mixes and cocktails. Oh, I did fail to mention that you will also feel super cool, and adrenaline will course through your body every time you find a reason to use your home bar.

Have you thought about making your own home bar but felt overwhelmed by the thought, or were the gadgets and gizmo options just way too daunting? No worries, that’s what our list and reviews will come to help you out with.

You will find it a must to a cocktail shaker with a built-in strainer, a double-headed jigger a paring knife that well sharpened should go without saying. A corkscrew for opening bottles and, of course, a bottle opener. A simple but good fruit juicer for your lemons and oranges, a blender to pulverize your ice (don’t buy a cheap one). If you really want to do it right, make sure you have a cutting board, a bar spoon, a bar towel, and of course, a huge selection of different cocktails, martini glasses!

Of course, as your experience with mixing grows, you will keep on adding to your list of what you must have and what you consider essential.

I will continue writing on equipment needs and, of course, start writing recipes for your bar in the weeks ahead. I am so excited about this new column, and I know you will be too!

Master Distiller Binyomin Terebelo’s Spirit Exploration TExploring The Spirits Of The World

Join me as I adventure into the wonderful world of alcohol creation.

As Master Distiller at Terebelo Distillery, I am always exploring and venturing to learn new things about distilling and alcohol. This summer, I was hoping to take a trip around the globe to experience firsthand the wonderful world of local spirits and liqueurs ranging from Scotland and Ireland’s normal and delicious Whiskeys. To the exotic such as Feni, an Indian spirit made from the distilled apple of the cashew. To the hills of Japan. The planes of the middle east Arak and the like. Did I leave out Sojo? Let’s share with you Sojo is practically the water of South Korea, or we can reword that the Vodka of South Korea.

Slivovitz, we will have to tour the eastern European countries to get a taste of what they have to offer, and there’s more there than Vodka. France and its oh-so-beautiful-sounding names from Armagnac, Cognac, and Calvados will be quite a trip! Of course, a stop at the Greek Islands for Kitron is a bonus!

Of course, the Americans from Bourbon in the United States, Canadain Whiskey, and the new king Tequila will all get their time in the spotlight on this virtual journey. So buckle up, grab a bottle(that’s the best part you can virtually drink and drive) and let’s go!

There are over 196 countries globally, and every country has its own unique flavor and style. Did I say 196 countries? Oh, too bad I included the Muslim countries where they don’t have alcohol. I guess we will eventually get to those countries and see if they might be making spirits for the non-muslim population, so hang on and remember what we learn will be put into a bottle at Terebelo Distillery, Your favorite Boutique Distillery!

So off we go in this day and age, at least virtually to the Philipines, where we hope to learn a little about their Lambaong, a delightful drink that we shall explore in our next article. Stay tuned and stay happy!

Black Elder Wine Recipe

Hey Guys and Gals!

Are you looking for an awesome Black Elder Wine Recipe light or full body flavor you will find it blow? So look no further you have found what you have been looking for! Below is the most awesome tasting Black Elder Wine Recipe in the world.

Directions

  • 1.2kg Black Elder berries
  • 4.5 litres Water
  • 1.1kg Sugar
Step 2
  • 2 tsp Acid Blend
  • 1 tsp Yeast Nutrient
  • 1/2 tsp Pectic Enzyme
  • 1 Campden Tablet
  • 1 sachet of Yeast (we recommend Lalvin RC 212)

Utensils

  • 2 Caroboy’s or fermenting containers
  • Fruit Press
  • Straining bag
  • Siphon
  • Airlock
  • Airlock bungee

Instructions

Step 1

Heat the water in a pan on the stove, add the sugar and stir to dissolve. Bring to the boil for a minute and then turn off the heat.

Use a potato masher to thoroughly crush the berries. Take the prepared elderberries and place them in the straining bag add them to your sanitized fermenting bucket.

Keep in mind elderberries will stain so try not to get any on your clothes. Your straining bag will never be the same color after making elderberry wine!

Step 2

After 24 hours add your yeast and the rest of stage 2 and cover your fermenter.

Take the sugar gravity with your hydrometer Starting Specific Gravity (S.G.) should be between 1.085 – 1.090

Stir your batch every day and check the Specific Gravity with your Hydrometer. In about 3 – 5 days your S.G. should be about 1.040.

Step 3

Now you will siphon your wine off of the sediment into your secondary container which is usually your glass carboy.

(The sediment is the stuff that accumulates at the bottom of your container.)

Attach your airlock and wait for your fermentation to be complete.

You will know it is complete when your S.G. has reached 1.000. This will take about 3 weeks.

Step 4

Siphon your wine off the sediment into a clean secondary carboy, reattach your airlock.

You will wait about 2 months and then siphon your wine off the sediment again. Keep doing this until your wine is clear. If it is clear now then it is time to bottle.

Step 5

Let wine sit for a couple of months before drinking.

Wild Blueberry Infused Bourbon D.I.Y.

Hey Guys and Gals, are you Looking for an awesome Wild Blueberry Infused Bourbon D.I.Y.? You now have no reason to look any further! This is a recipe you are sure to enjoy!

Ingredients

Step 1
  • 3 cups of Wild blueberries
  • 3 cups of bourbon
Step 2
  • 2 cups white granulated sugar
  • 1 cup boiling water

Instructions

Step 1

Clean then crush your blueberries and place them in your jar. Next pour in your bourbon make sure all the blueberries are submerged cover and shake.

Aging And Straining

Seal the container and let steep in a cool, dry place for 3 days.

Get your cheesecloth to filter it helps to moisten the cheesecloth first so the liquid permeates more smoothly.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the remaining liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Step 2 optional

Make your syrup, put a saucepan on the flame pour in water and bring to a boil stir in sugar keep on stirring until sugar has dissolved. Let the syrup cool down completely.

Pour into a jar and let it rest in a dark place for another 15 days.
When the 15 days are up, filter it again and bottle it up.

Charantais Melon Wine Recipe D.I.Y.

Ingredients

Step 1
  • 8 cups of Charantais Melon juice
  • 1/8 teaspoon tannin (or cup of black tea)
  • 2 lbs / 900 grams granulated sugar
  • 2 1/2 teaspoons acid blend
  • 8 cups of water
  • 1 campden tablet
Step 2
  • yeast and 1 teaspoon yeast nutrient  Lalvin: K1-V1116 (European equivalent Gervin Varietal “E”) and QA23 (a European equivalent is unknown).

Instructions

 Equipment

  • Primary fermenter (carboy)
  • stirring spoon
  • hydrometer,
  • straining bag
  • siphon tubing kit
  • 1 gallon carboy or jug
  • an airlock and bung
  • Sanitizer
  • (A thermometer and brewing belt may be used to monitor and control temperature.)

Walmart

Make sure all equipment (i.e. stirring spoon, etc..) is sterilized you can bleach it or boil. Contaminated equipment can let a stray yeast enter the wine and ruin its taste.

Instructions

Step 1

Start your yeast starter wait 24 hours by combining the yeast 2 cups of water and yeast nutrients then you will add your prepared juice.

 Yeast Hydration when the package specifies hydration as opposed to 24 hours fill a large cup with 4 ounces of warm chlorine-free water.

Stir the yeast into the water then let the mixture stand in a cup for 15 minutes, make sure it is bubbling, and then you will add it to your wine.

Step 2

Chop the flesh from the melon into cubes and squeeze out the juice through a straining bag, sieve, or electric juicer.

Pour the juice into the fermentation bucket and add all ingredients apart from the wine yeast, stirring well.

Step 3

Take your hydrometer reading and calculate all the measurements.

Attach your airlock and wait for your fermentation to be complete, let ferment with the pulp for 5-7 days gently agitate daily.

After 5-7 days when the foaming calms down, you will siphon your wine off of the sediment into your secondary container which is usually your glass carboy.

(The sediment is the stuff that accumulates at the bottom of your container.)

Step 3

After you strained into your secondary carboy wait till the fermentation activity dies down (could be between several weeks to several months)

Final Step

Although yeast activity will decrease as the fermentation process proceeds, there will still be fermentation going on as long as you still see some foaming or bubbling.

then rack into a clean carboy.

Canary Melon Wine Recipe D.I.Y.

Ingredients

Step 1
  • 8 cups of Canary Melon juice
  • 1/8 teaspoon tannin (or cup of black tea)
  • 2 lbs / 900 grams granulated sugar
  • 2 1/2 teaspoons acid blend
  • 8 cups of water
  • 1 campden tablet
Step 2
  • yeast and 1 teaspoon yeast nutrient

Instructions

 Equipment

  • Primary fermenter (carboy)
  • stirring spoon
  • hydrometer,
  • straining bag
  • siphon tubing kit
  • 1 gallon carboy or jug
  • an airlock and bung
  • Sanitizer
  • (A thermometer and brewing belt may be used to monitor and control temperature.)

Make sure all equipment (i.e. stirring spoon, etc..) is sterilized you can bleach it or boil. Contaminated equipment can let a stray yeast enter the wine and ruin its taste.

Instructions

Step 1

Start your yeast starter in step 2 wait 24 hours, then you will add your prepared yeast. Or just skip to yeast hydration.

 Yeast Hydration and primary fermentation: in a large cup add 4 ounces of warm chlorine-free water.

Stir the yeast into the water then let the mixture stand in a cup for 15 minutes, make sure it is bubbling, and then you will add it to your wine.

Step 2

Chop the flesh from the melon into cubes and squeeze out the juice through a straining bag, sieve, or electric juicer.

Pour the juice into the fermentation bucket and add all ingredients apart from the wine yeast, stirring well.

Step 3

Take your hydrometer reading and calculate all the measurements.

Attach your airlock and wait for your fermentation to be complete, let ferment with the pulp for 5-7 days gently agitate daily.

After 5-7 days when the foaming calms down, you will siphon your wine off of the sediment into your secondary container which is usually your glass carboy.

(The sediment is the stuff that accumulates at the bottom of your container.)

Step 3

After you strained into your secondary carboy wait till the fermentation activity dies down (could be between several weeks to several months)

Final Step

Although yeast activity will decrease as the fermentation process proceeds, there will still be fermentation going on as long as you still see some foaming or bubbling.

then rack into a clean carboy.

Cranberberry Infused Rum Recipe D.I.Y.

Hey Guys and Gals!

Ingredients

Step 1
  • 4 cups of rum
  • 2 cups Cranberries, fresh
  • 8 Allspice berries
  • 4 Cinnamon sticks
  • 8 Cloves
  • 2 Star anise, whole
  • 2 cinnamon sticks
Step 2 Optional
  • 1 1/3 cup of water
  • 1 1/3 cup of sugar

Directions

Rinse your cranberries then crush them add into your jar then add your spices and rum.

Aging, Straining, And Drinking Your Cranberry Infused Rum Recipe

Let your liqueur age/steep for 1 week in a cool dark place. Taste if it is strong enough for your likings start to strain otherwise let it age a little longer.

Strain the liquid through several layers of cheesecloth.

It helps to moisten the cheesecloth first so the liquid permeates more smoothly.

Once you get to the point of where you have strained everything out, you can gently wring the cheesecloth to extract all of the liquid and juice.

If you still need to you can strain your liqueur one more time through a coffee strainer.

Step 2 Optional

Bring your water to a boil and stir in the sugar. Keep on stirring till all the sugar has dissolved finally when call pour in your sugar water slowly tasting all the while till its sweetened to your taste.

Notes on Utensils and Ingredients

  • Glass is always preferable when working with strong alcohol. Avoid plastic as much as possible.
  • Use organic ingredients to avoid pesticide residues.
