Lemonade Kombucha Recipe D.I.Y.

Hey Guys and Gals,

Are you looking for an awesome Lemonade Kombucha Recipe? Well, you now have no reason to look any farther. Get ready for a great drink!

Ingredients

  • 2 cups of kombucha
  • 1/2 cup fresh lemon juice

Directions-Bottling

  • Pour your lemonade into your bottle and add your kombucha. Make sure that you leave a little space for carbonation.
  • When you are going to use multiple bottles, pour kombucha-Scoby from base recipe and the recipe into a large bowl mix then divide into bottles.
  • Now follow the directions second fermentation – leave to ferment as outlined for 1-3 days.(You will not be do doing the measurements as in adding fruit you have sugar to scoby.)
  • You may filter and bottle at this point,
  • Place back in to fridge to prevent farther fermentation and of course served chilled.

  • 1 lemon

Directions-Bottling

Kombucha Second Fermentation

Making homemade kombucha has three main steps (click the links below to jump around the post):

  1. Make SCOBY 7-10 days
  2. First Fermentation (6-10 days) – makes the actual kombucha tea
  3. Second Fermentation (3-10 days) – carbonates the kombucha tea

Second Fermentation

The Second fermentation is adding sugar or puree to you brew then bottling and sealing this traps the carbonation created by the fermentation and makes the Kombucha carbonated.

It typically takes 2-4 days to ferment and get fizzy but can take longer.

(Remove your SCOBY and 2 cups of kombucha from your brewing vessel and set it aside. Reserve this for your next batch of kombucha. This starter tea + SCOBY combo will be what you use to make a future batch of kombucha! You can keep it in a SCOBY hotel for future use. Or just put it temporarily in a spare bowl if you plan to use it immediately to make your next batch of kombucha.)

Add 3-4 cups of pureed/juiced fruit into what should be about a gallon of kombucha.

Stir the kombucha in the brewing vessel after adding the pureed fruit. This helps all the bottles carbonate evenly by distributing all the compounds evenly.

Bottling

Pour your kombucha into your bottles close tightly making sure they are sealed.

Do not fill your bottles all away to the top fill them like a soda bottle is filled leaving room for the CO2.

Ferment for another 2-4 days at room temperature. Place in a safe place, in particular if you used glass bottles on the slight possibility that you over carbonated and they explode.

If you used plastic bottles which is what I recommend feel if they got hard if they are hard you know they are carbonated.

You can open a bottle now to see how the carbonation is going and if it needs more time out of the refrigeration.

Place in fridge the cold stops carbonation and of course makes it more delicious.

Here is a list of the simplest utensils that you can use; the ones Mom should already have in the kitchen:)

Utensils:
–  small funnel
– glass bottles, or storage containers, for bottling and serving, you can either use the glass Jar you used before, or just buy a second one.

Kombucha First Fermentation

Making homemade kombucha has three main steps (click the links below to jump around the post):

Kombucha First Fermentation Step By Step

Ingredients

  • 4 cups of water boiled
  • 2-3 tbsp. loose-leaf black tea
  • ¾ cup cane sugar
  • 8 cups of cool/cold water
  • 1 SCOBY
  • 2 cups kombucha starter tea-(any previously fermented Kombucha tea you can buy it)

Utensils

  • Steeping vessel (pot + strainer, or french press)
  • 1 gallon glass jar
  • Food thermometer
  • Cotton cloth cover (coffee filter, clean shirt/bandana, fine-weave cheese cloth)
  • Rubber band

The Tea

Make a tea concentrate by boiling 4 cups of filtered water. Once boiling, turn the heat off and steep your loose-leaf tea for 15 minutes.

Strain out the tea leaves with a strainer to your fermentation jar.

Add in your sugar do not use a sugar alternative they can at best not ferment at worst dangerous.

Add 8 cups of cool/cold water to the jar to dilute the tea and bring the temperature down.

When the temperature is between 65-80F add the SCOBY and Yeast

Cover with a few layers of the tightly woven cloth to keep out bugs and debris and put rubber band around to hold tight.

There can be a level of fermentation so do not tightly cover and make sure that there is room for growth and foaming in bottle. I recommend to leave a 1/3 empty.

Place somewhere dark with a room temperature (70-75 degrees F, 21-24 C) 7-10 days

Leave it alone for at least a few days and definitely don’t shake it.

How To Make SCOBY For Kombucha

Making homemade kombucha has three main steps (click the links below to jump around the post):

Making The SCOBY

The SCOBY (Symbiotic Culture Of Bacteria and Yeast) Is the yeast that makes the fermentation.

While you can buy a ready-made SCOBY (online ), it’s easy to make it yourself! Just buy a bottle of Kombucha and you are ready to start.

Make a Tea and let cool to room temp add a 5 more cups of water and a cup of sugar.

Pour the sweetened tea into your jar, then pour store-bought kombucha in, making sure all of the residue in bottle is pored into your fermentation this is because kombucha has live yeast in it that you are going to propagate as in grow.

Cover with a few layers of the tightly woven cloth to keep out bugs and debris, there can be a level of fermentation so do not tightly cover and make sure that there is room for growth and foaming in bottle. I recommend to leave a 1/3 empty.

Place somewhere dark with a room temperature (70-75 degrees F, 21-24 C) 7-10 days when you will see a a ¼ inch (½ cm) SCOBY has formed.

You now have a SCOBY! The SCOBY should live and grow for years if treated with love. Allow the SCOBY to remain in this liquid until you are ready to use the SCOBY for the next step, the 1st fermentation.

Things To Note When Making Your SCOBY For Kombucha

  • Do not use decaf, black tea, or honey in place of sugar.
  • Glass is always preferable when working with strong alcohol. Avoid plastic as much as possible.
  • Use organic ingredients to avoid pesticide residues.

Strawberry Basil Kombucha Recipe

Ingredients

  • 1-2/3 gallons homemade kombucha (pre-made Scoby needed)
  • 2 cups heaping ripe strawberries chopped
  • ½ cup sugar
  • ½ cup water
  • 2 ounces fresh basil chopped (1 cup)

Directions

Place the strawberries, sugar, water and basil into a saucepan and bring to a full boil.

Then reduce heat and simmer for 10 minutes. Remove from heat, mash the strawberries with a fork and allow mixture to cool to room temperature.

Place into your aging with all the ingredients into jar close and place in a warm dark place for fermentation.

After 4 days,

Strain the liquid through a cheesecloth squeezing the pulp gently. It helps to moisten the cheesecloth first so the liquid permeates more smoothly. Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the remaining liquid and juice. (you can use a coffee strainer to)

Next bottle and refrigerate the bottles so they may be chilled before drinking.

When ready to drink, point the bottle away from your face and carefully open, as gasses will have been built and the kombucha will be fizzy.
