Ingredients

  • 2 2/3 4-inch sticks of cinnamon sticks
  • 3 cups of sweet vermouth

Utensils Tips

Here is a list of the simplest utensils that you can use; the ones Mom should already have in the kitchen:)

Utensils:
– cheesecloth
– saucepan
– small funnel
– glass bottles, or storage containers, for bottling and serving, you can either use the glass Jar you used before, or just buy a second one. 

Directions

  • Place the cinnamon and vodka in to your jar. Pour in the vermouth making sure all of the cinnamon is covered with alcohol. If you need to add in some more vermouth, close the container.

Aging, Straining, filtering, and Drinking Your Cinnamon Infused Vermouth Liqueur

Shake well and store away from sunlight in a cool and dry place for a minimum of 3 weeks.

After 3 weeks or more of aging, strain your liqueur through several layers of cheesecloth.

It helps to moisten the cheesecloth first so the liquid permeates more smoothly.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Cinnamon Stick Wine Recipe D.I.Y.

Hey Guys and Gals!

Ingredients

Step 1
  • 12 six-inch cinnamon sticks
  • 2 lbs granulated sugar
  • 7-1/2 pts water
  • 1 tsp yeast nutrient
  • 1/8 tsp tannin
  • 3 tsp acid blend
Step 2
  • 1 crushed Campden tablet
  • Champagne wine yeast

Instructions

 Equipment

  • Primary fermenter (carboy)
  • stirring spoon
  • hydrometer,
  • straining bag
  • siphon tubing kit
  • 1 gallon carboy or jug
  • an airlock and bung
  • Sanitizer
  • (A thermometer and brewing belt may be used to monitor and control temperature.)

Walmart

Make sure all equipment (i.e. stirring spoon, etc..) is sterilized you can bleach it or use . Contaminated equipment can let a stray yeast enter the wine and ruin it’s taste.

Instructions

Step 1

Put cinnamon sticks and 2 cups of water in a pot. Bring to a simmer for 10 min with lid on.

Turn off heat, and let steep for two hours.

Strain the water into carboy and discard the cinnamon sticks. Add sugar to remaining water and bring to a boil.

Turn off heat and stir until sugar is dissolved. Add all remaining ingredients to secondary except and yeast and then pour in the sugar-water.

Wait 24 hours and then add Campden and yeast.

Step 2

 Yeast Hydration and primary fermentation: in a large cup add 4 ounces of warm chlorine free water.

Stir the yeast into the water then let mixture stand in cup for 15 minutes, make sure it is bubbling and then you will add it to your wine.

Take your hydrometer reading and calculate all the measurements.

Attach your airlock and wait for your fermentation to be complete, let ferment with the pulp for 5-7 days gently agitate daily.

After 5-7 days when the foaming calms down you will siphon your wine off of the sediment into your secondary container which is usually your glass carboy.

(The sediment is the stuff that accumulates at the bottom of your container.)

Step 3

After you strained into your secondary carboy wait till the fermentation activity dies down (could be between several weeks to several months)

Final Step

Although yeast activity will decrease as the fermentation process proceeds, there will still be fermentation going on as long as you still see some foaming or bubbling.

then rack into a clean carboy.

After fermentation has stopped completely any remaining sugar required to sweeten it to suit your taste.

When the wine has cleared and is inactive – taste and bottle.

Stage 4: Aging / Bottling

You can repeat the racking process several times to get the maximum clarity though I would wait in-between each time a day or to, so the sediment can settle. I personally don’t like racking multiple times because of the risk of oxidation meaning the air touching it will give it a funny taste.

Bottle using the siphon cork and let wine sit for 6-12 months before drinking. Some would even prefer waiting 2 years!

Apple Cinnamon Kombucha Recipe

  • 1/2 apple
  • 1/4 cinnamon stick

Directions-Bottling

  1. Finely dice your apple and add with your cinnamon to your bottle pour in kombucha do not fill bottle all away to top.
  2. If you are making multiple bottles pour in kombucha-Scoby from base recipe to the mixture mix in a large bowl then divide into bottles.
  3. Follow the directions second fermentation – leave to ferment as outlined for 1-3 days (Though you wont be do doing the measurements as in adding fruit you have sugar to scoby.)

Let age for a minimum of 4 weeks in a cool dry place.

Straining, some prefer the look of having the ingredients in the bottle others prefer to strain using a cheesecloth.

When using a cheesecloth to strain when you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the remaining liquid and juice.

Step 2

Heat up the water in a saucepan, when the water is boiling stir in the sugar making sure that it does not burn. When the sugar dissolves shut off the fire and let cool then pour into liqueur slowly tasting it all the while so you don’t over sweeten.

Instructions for Creating, Aging, Straining, filtering, and Drinking Your Honey Walnut Liqueur

Step 1

Preheat your oven to 350F. Spread shelled nuts on a cookie sheet aking sure that they do not over lap and bake until lightly toasted and golden, (5-10 minutes)

Or you can toast nuts over medium heat in a heavy saucepan, tossing until lightly toasted (1-2 minutes).

Place your toasted nuts into a 1-liter jar. Add brandy and seal quickly so alcohol doesn’t evaporate.

Stand in a cool, dark place for 1 month, shaking occasionally. Strain and filter.

Step 2 & 3

Bring water and honey to a boil together, boil together for 2-3 minutes. Skim off any foam that may develop.

Remove from heat and add cinnamon and cloves to the hot liquid. Stand until just warm.

Add vanilla, orange zest and lemon zest to syrup. Add syrup to liqueur, seal, and steep for 2 days.

Strain and filter again.

May be served immediately, but better if aged 1 month

After 2 weeks its time to strain your liqueur.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the remaining liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

The coffee filter may take a while so cover over the coffee filter and come back in a few hours.

Step 2

In a small saucepan, combine the sugar and water. Bring to a boil over moderately high heat. Simmer, uncovered, till the sugar is all dissolved stirring the entire time so the sugar doesn’t burn.

Let cool to room temperature. Funnel the strained spice mixture into a glass bottle, then funnel in the sugar syrup.

Cork tightly; shake to blend. Let mature at room temperature or slightly cooler for at least 1 week.
