  • 1 1/4 pound of Jackfruit
  • 3 cups of rum

Step 1

Collect the arils that’s the bright yellow rubbery stuff, by pulling them from that fibrous pith. You don’t any of the white stuff. Next slice it open to remove the seed.

Place the rubbery arils, in the freezer to encourage the separation of the juice from the pulp. Freeze them solid to rupture the cells within and liberate more juice.

(The arils never got mushy like a peach or strawberry that had been frozen, but they loss their stiffness and are much more floppy.)

Step 2

You need a blender, set up blender then, pour in 1 cup of rum and all the jack fruit and blend till the fruit is pulverized and chunky. (do not blend till its smoothie thin)

Pour your blended mix your aging container, add in the rest of your rum and close to let age.

Aging, Straining, filtering, and Drinking Your Jackfruit Liqueur

Shake well and store away from sunlight in a cool and dry place for 1 week.

After 1week its time to strain the liqueur.

When using your cheesecloth, It helps to moisten the cheesecloth first so the liquid permeates more smoothly.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the remaining liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Further aging will help mellow the taste, you can add more rum or water if the jackfruit is to strong for your liking.
