Blackcurrant Liqueur Recipe D.I.Y.

Hey Guys and Gals!

Ingredients

Step 1
  • 2 1/2 pounds of blackcurrants
  • 3 cups of Vodka
Step 2
  • 3 cups of water
  • 8 cups of sugar

Utensils Tips

Here is a list of the simplest utensils that you can use; the ones Mom should already have in the kitchen:)

Utensils:
– cheesecloth
– saucepan
– small funnel
– glass bottles, or storage containers, for bottling and serving, you can either use the glass Jar you used before, or just buy a second one. 

Directions

Wash dry then crush the berries. Put the pulp on a cheesecloth or thick fabric and squeeze the juice from it.

Save in a container for the time being.

Step 2

Pour water into a cooking pot, add sugar and stir with a spoon. Place on heat and bring to a boil. During the cooking process, the sugar syrup will produce a white foam which should be removed. Cook until thick.

Add blackcurrant juice to the sugar syrup, bring to a boil, and take off the stove let cool and pour into your aging container.

(If you would like a less sweet liqueur cut down on the sugar)

Add vodka and stir close the container and shake.

Your homemade Blackcurrant is ready to age.

Aging Straining, filtering, and Drinking Your Blackcurrant Liqueur

After 1 week of further aging, strain your liqueur through several layers of cheesecloth.

It helps to moisten the cheesecloth first so the liquid permeates more smoothly.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Brazil Cherry Liqueur Recipe D.I.Y.

Ingredients

  • 8 cups of Brazilian Cherry
  • 3 cups of vodka

Utensils Tips

Utensils:

– cheesecloth
– saucepan
– small funnel
– glass bottles, or storage containers, for bottling and serving, you can either use the glass Jar you used before, or just buy a second one. 

Directions
  • Crush the berries and remove the pits, then pour the berries with the juice into your glass container. Add the vodka making sure that all the berries are fully submerged.
  • For a sweeter Brazilian Cherry Liqueur, place the berries in the refrigerate over night this helps bring out their sweetness. Or you can add sugar to taste after the aging process before bottling

Aging, Straining, filtering, and Drinking Your Brazil Cherry Liqueur

Shake well and store away from sunlight in a cool and dry place for a minimum of 1 weeks.

After 1 weeks or more of aging, strain your liqueur through several layers of cheesecloth.

It always helps when you moisten the cheesecloth first, it enables the liquid to permeate more smoothly saving you some precious liqueur.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Taste, if you need to add sugar, first boil the equivalent amount of water to the amount of sugar you want to add.

Example:

  • 1 cup of boiling water
  • 1 cup of sugar

Dissolve the sugar in the water and now add when cool to the liqueur . Now shake your liqueur, this should prevent there being sugar granules in the liqueur.

Almond Liqueur Recipe D.I.Y.

Ingredients

Step 1

1/2 tsp. pure almond extract or 3 oz. chopped, fresh unblanched and unsalted almonds
1 1/2 cups vodka

Instructions:

Stage 1

Mix all ingredients in stage 1 together close container and shake well.

Aging, Straining, filtering, and Drinking Your Almond Liqueur

If made with extract, mature several days. If made with chopped almonds, mature 2 week in a cool dry place.

Filtering the purpose of filtering is to remove the particles floating around and some of the cloudiness.

Use a cheesecloth to filter, once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the remaining liquid and juice.

It helps to moisten the cheesecloth first so the liquid permeates more smoothly.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Pour back into container.

Step 2

Boil the water in a saucepan bring to a boil pour in the sugar while stirring the entire time to prevent the sugar from burning. When the sugar is dissolved turn off fire and let cool.

Pour in the sugar water slowly tasting all along till it is sweetened to taste then close back up the container and let mature for another 3 weeks.

Acorn Liqueur Recipe D.I.Y.

Ingriedients

Step 1
  • 6-7 Ounces of roasted acorns
Step 2
  • 1 1/2 cups of sugar
  • 1 2/3 cups of water
  • 1/4 of a vanilla pod
Step 3
  • 3 cups of vodka/Rum for a fuller taste

Utensils

Directions

Step 1

Remove the tannins from the acorn by To remove tannic acid, you must leach the acorns with water.  Toss the nuts into a large pot, and cover them with plenty of water.  Bring to a boil, then boil for about 15 minutes.  The water will turn brown, the color of tea, as the tannic acid is extracted from the kernels.  Throw out the water and replace it with fresh water. 

To save time, have a second pot of water already boiling put into the second pot and boil for 15 keep on doing until the water stops turning brown.

Then roast your acorns in the oven for 15 at 400F or till its brown remember the darker and longer they are roasted the heavier taste they will give in comparison to a light to dark roast coffee.

Take out and let cool.

Grind your acorns into small pieces, don’t grind till a thin powder because that wont be strain able.

Step 2

Pour the water into the pot bring to a boil stir in the sugar then add the stick of vanilla, then add in the acorn grounds and let cool.

Step 3

Add the Vodka close and seal the container.

Bottling, Aging, Straining, filtering, and Drinking Your Acorn Liqueur Recipe

Fill some mason jars with this mix. Put them in the fridge for the perfect taste wait a minimum of 2 months.

After 2 months strain the liquid through a cheesecloth squeezing the pulp gently. (don’t do all at once make sure you like the taste when filtered)

It helps to moisten the cheesecloth first so the liquid permeates more smoothly.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the remaining liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Fancy Anise Liqueur Recipe D.I.Y.

Ingredients

Step 1
  • 2 Tbl. Caraway seeds
  • 1 1/2 tsp Anise seeds
  • 1 tsp. Fennel seeds
  • 1 tsp. Angelica root, crushed
  • 2 Cloves
  • 3/4 tsp Cumin
  • 1 pinch Pepper
  • 24 oz Vodka (80 proof)
Step 2
  • 1 tsp. Glycerine
  • 1 cup Granulated sugar
  • 1/2 cup Distilled water

Instructions

Step 1

Combine spices, seasonings and vodka in your glass jar close.

Aging and Straining Your Fancy Anise Liqueur

Let the mixture infuse in a cool, dark place for a week cover and store vodka mix in a cool dark place for 2-3 weeks.

Strain your liqueur through several layers of cheesecloth removing all the seeds etc. Discard the cheesecloth.

(It helps to moisten the cheesecloth first so the liquid permeates more smoothly)

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Step 2

Add the glycerin.

Pour the water into a saucepan and bring to a boil. Add the sugar, stirring rapidly. When the sugar is dissolved, remove from heat. Allow the sugar syrup to return to room temperature.

Add the syrup to the alcohol mixture. pour back into your glass jar or bottle and wait anothe 3 months for best taste!

Utensils:
– A large glass jar (I used a 3 liter jar)
 large plastic bowl
– paring knife
– vegetable peeler  (or knife)
– measuring cups (liquid and dry)
– metal strainer
– cheesecloth
– saucepan
– small funnel
– glass bottles, or storage containers, for the final product, you can either use the glass Jar you used before, or just buy a second one. 

Notes on Ingredients and Utensils

*Vodka, you may want to leave it to infuse a little longer (double the time) and use half the syrup — therefore half the sugar and half the water given below.  This recipe makes a liqueur that has an alcoholic content of about 30 per cent.


Try to avoid plastic as much as possible when working with strong alcohol. Glass is always preferable.
