Ingredients<\/h4>\n\n\n\n

Step 1<\/h4>\n\n\n\n
  1. The peel of 2 Etrogs<\/li>
  2. 1 cup alcohol (in Italy we use a 190-proof\/95 per cent alcohol) or Vodka*<\/li><\/ol>\n\n\n\n

    Step 2<\/h4>\n\n\n\n
    1. 1 cup of water<\/li>
    2. 1 2\/3 cup of sugar <\/li><\/ol>\n\n\n\n

      Wash the etrog gently but very well, going over it carefully perhaps with a brush where there may be dirt trapped in its pores. <\/p>\n\n\n\n

      Peel the citron with a vegetable peeler, making sure you are only removing the bright yellow peel and no white pith. Place the peels in a large jar.Pour In the alcohol. <\/p>\n\n\n\n

      Let the mixture infuse in a cool, dark place for a week the alcohol will become bright yellow and fragrant while the peels turn white.<\/p>\n\n\n\n

      Strain your liqueur through several layers of cheesecloth. Discard the cheesecloths.<\/p>\n\n\n\n

      (It helps to moisten the cheesecloth first so the liquid permeates more smoothly)<\/p>\n\n\n\n

      Once you get to the point where you\nhave strained everything out, you can gently wring the cheesecloth to extract\nall of the liquid and juice.<\/p>\n\n\n\n

      If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer<\/a>.<\/p>\n\n\n\n

      Step 2<\/h5>\n\n\n\n

      Combine the water and sugar in a saucepan and heat gently, stirring occasionally until the sugar dissolves. <\/p>\n\n\n\n

      Take off the heat and let cool completely before adding to the citron-infused alcohol. Keeps well in a bottle for months. Serve ice cold.<\/p>\n\n\n\n

      Add the sugar and shake until dissolved in the liqueur. Now let age for additional 3-4 months for the best taste.<\/p>\n\n\n\n

      glass bottles<\/a>, or storage containers<\/a>, for the final product, you can either use the glass Jar<\/a> you used before, or just buy a second one. <\/p>\n\n\n\n

      *Vodka, you may want to leave it to infuse a little longer (double the time) and use half the syrup \u2014 therefore half the sugar and half the water given below.  This recipe makes a liqueur that has an alcoholic content of about 30 per cent. <\/p>\n\n\n\n


      Try to avoid plastic as much as possible when working with 
      strong alcohol<\/a>. Glass is always preferable.<\/p>\n\n\n\n
