Toasted Black Walnut Liqueur Recipe D.I.Y.

Ingredients

Step 1
  • 1 cup shelled black walnuts
  • 1 cup vodka
  • 1/2 cup bourbon
Step 2
  • 1 1/2 cup light corn syrup
  • 1/2 cup water
  • 1 teaspoon pure vanilla extract

Utensils Tips

Here is a list of the simplest utensils that you can use; the ones Mom should already have in the kitchen:)

Utensils:
– cheesecloth
– saucepan
– small funnel
– glass bottles, or storage containers, for bottling and serving, you can either use the glass Jar you used before, or just buy a second one. 

Directions

Toast walnuts.

Preheat an oven to 375 F. While the oven heats, lay the walnuts on a baking sheet (you can line it with foil or parchment paper for easy clean-up). Single layer with some space between the walnuts so there’s room for hot air to circulate around them evenly. When the oven is heated, roast the walnuts until they just start to brown and smell toasted, 5 to 10 minutes.

They go from toasted to burnt very quickly, so start checking them after 5 minutes; then check them every minute until you notice them starting to brown and they smell nutty. Pull the walnuts out of the oven as soon as you notice a color change. 

Transfer to clean 1 quart jar with tight fitting lid. Add vodka and bourbon and cover tightly right away so alcohol doesn’t evaporate.

Aging Straining, filtering, and Drinking Your Toasted Black Walnut Liqueur

Let stand in a cool dark place for 1 month, shaking occasionally.

After 1 month aging, strain your liqueur through several layers of cheesecloth.

It helps to moisten the cheesecloth first so the liquid permeates more smoothly.

Once you get to the point where you have strained everything out, you can gently wring the cheesecloth to extract all of the liquid and juice.

If you still need to strain your liqueur further due to lack of clarity, you can strain it 1 more time through a coffee strainer.

Step 2

Transfer liqueur to clean container.

Bring corn syrup and water to a boil over medium high heat, stirring constantly to prevent scorching.

Remove from heat and let stand until just cooled off. Add syrup and vanilla to liqueur, cover and age for 1 month.

Honey Walnut Liqueur Recipe D.I.Y.

  • 1 teaspoon orange zest
  • 1 teaspoon lemon zest
  • 1 cinnamon stick
  • 3 whole clove

Instructions for Creating, Aging, Straining, filtering, and Drinking Your Honey Walnut Liqueur

Step 1

Preheat your oven to 350F. Spread shelled nuts on a cookie sheet aking sure that they do not over lap and bake until lightly toasted and golden, (5-10 minutes)

Or you can toast nuts over medium heat in a heavy saucepan, tossing until lightly toasted (1-2 minutes).

Place your toasted nuts into a 1-liter jar. Add brandy and seal quickly so alcohol doesn’t evaporate.

Stand in a cool, dark place for 1 month, shaking occasionally. Strain and filter.

Step 2 & 3

Bring water and honey to a boil together, boil together for 2-3 minutes. Skim off any foam that may develop.

Remove from heat and add cinnamon and cloves to the hot liquid. Stand until just warm.

Add vanilla, orange zest and lemon zest to syrup. Add syrup to liqueur, seal, and steep for 2 days.

Strain and filter again.

May be served immediately, but better if aged 1 month
